Breadfruit Balls

When my mom, sister and grandmothers came to visit me last term we had the amazing opportunity to eat several home coked Grenadian meals. The sweet housekeeper Eva, at their cottage would gather provisions and cook a wonderful meal for a small fee. I of course requested one night to have oil down....it went over with mixed reviews but its a must here and I really enjoy it. Anyway, the real showstopper was an enormous meal consisting of stewed fish, bbq stewed chicken, beans, veggie salad, plantains, callaloo soup and (from the title of this page) breadfruit balls. Now for those of you who don't know breadfruit its essentially a potato. This blue collar/poor mans food can be turned into a delicious, golden brown crispy little ball that is nothing short of heaven.....I know because I probably ate about 10 that night at dinner. Anyway I thought I'd share the recipe with you all and pay homage to that wonderful cooking and wonderful visit by my family. If you feel ambitious and want to try this recipe some international grocery stores carry breadfruit in the US.

Ingredients. Serves 8
  • 1 ripe Breadfruit. Boiled and mashed
  • 2 Onions, chopped
  • 10 cloves Garlic, minced
  • 1/4 tsp cumin
  • 1 tsp Hot Pepper sauce or grated cheese
  • 1-2 cups flour
  • 3 eggs
  • Breadcrumbs
  • Oil – enough for frying
Method.
Begin heating the oil. Place the hot, mashed breadfruit in a large bowl and add onions, garlic, 1 cup flour, cumin, large pinch of salt, 1 egg and hot sauce mix all the ingredients, add extra flour 1 tablespoon at a time until the mixture if firm. When cool mould the mixture into golf sized ball’s and roll in breadcrumbs. Beat the other egg and coat each ball. Deep fry until golden brown and drain on kitchen paper. Delicious.
